Jaws recipe + statement

The main idea with the cooking food project – HOME AWAY RESORT ROOM SERVICE - for me is that food is the most important for our lifes. How we treat things that we call important by destroy them by the heat or anytthing else - and after that put them in our stomach. People are more concern about how we produce our food and how we transport them! lf you can´t produce it you need you to use it all. From root to leaves. lf we care how much energy we are spending for cooking we must learn how to make it fast or how to eat it raw. Thats what we have been doing before we discover fire. Let us learn and enjoy our food. Good food will lead good conversation.

GUEST CHEF/ARTIST @ HOME AWAY RESORT Copenhagen December 7-18 2009. A project made by r a k e t a - invited to Copenhagen by New Lipe Copenhagen.



THE PLAN

First meetingplace: fried noodlle with eggs and vegetables in 30 min. for 7 persons
Second meetingplace: Green curry tofu with vegetables in 20 min. for 7 persons
Third meetingplace: Wok tofu with vegetables in 10 min. for 6 persons

Fourth meetingplace: Raw salmon salad with chili 10 min. for 6 persons
Fifth meetingplace: Spicy carrot and cucumber salad 10 min. for 6 persons.


l put less and less time for using the stove and in the last metingplace l just cook only raw food without using any kind of heating - only raw ingredients, but making it more spicy the food can keep the body warm in the coldness. ln many countries they use spicy food as medicine to help the body fucntion better. If we do care so we need to care from a small part of the society, that means we need to understand and make ourself fucntion. First after that it will be easy to understand the other.


Green curry tofu with vegetable

Ingredients:

-100 g. green curry paste.
-2 tablespoons vegetable oil.
-800 g. tofu.
-1/2 lit. coconut milk.
-1 kg. squash or egg plants.
- 15- 20 sweet basil leaves.
- fish sauce.


How to cook:

1. Heat a large pot ( 10 lit.) over gentle heat and add the oil. When the oil is hot add green curry paste, stir for one minute.
2. Add coconut milk and keep stiring for a few minutes.
3.Raise the heat to high, add tofu and vegetables. let it cook for a few minutes.
4. Add sweet basil and fish sauce to taste.
 


Wok tofu with vegetable

Ingredients:

- 4 tablespoons vegetable oil.
- 2 tablespoons chop garlic and chili.
- 400 g, tofu.
- 1 kg. vegetables mixed, broccoli, carrot or cabbage.
- Soja sauce.


How to cook:

1. Heat the wok and add vegetable oil,
2. Add the garlic and chili , fry for one minute.
3.Add the tofu, let it cook for 2 minutes.
4.Raise the heat and add the vegetables wok it for 2 minutes, add soja sauce to taste.



Raw salmon salad with chili

Ingredients:

-600 g, raw salmon, thin slice.
-500 g,green apples, thin slice
-200 g, spinach or other salad.
-2 red onions, thin slice.
-10 red chili, chopped.
-4 tablespoons koriander, chopped.
-2 limes.
-5 tablespoon chopped koriander.
-fish sauce.


How to mix salad:

1. Mixed all ingredients together and add fish sauce and lime juice to taste.
2. Served with hard bread and a lot of drinking water will be need.


Spicy carrots and cucumber

Ingredients:

- 5-10 chilis.
- 1 kg, cucumber chopped.
- 600 g, slice carrot.
- 200 g. cocktail tomatoes.
- 1 tablespoon garlic.
- 1 lime.
- Fish sauce.


How to mixed:

1. Smash garlic, chili and tomatoes together.
2. Mixed all ingredients to gether and add fish sauce and lime
juice to taste.

When it comes to the Climate Summit I still believe that those who want a change can have a change. Maybe (of course) not 100% if you mainly choose to depend on others. Those who firstly perform their own tasks will at least be partly rewarded - that's a good start.

Thanks Morten, for a nice time around the guided tour on the Saturday afternoon, in your precious workstudio on the first floor in an urban compact living two-storey-flat in lower Vesterbro:-)! It was indeed interesting to get a bit more closely acquainted to your music-, film- and book collections. Particularly the middle part of the bottom shelf in the bookshelf next to your music equipment. I could (nearly) die to have - exactly!! - that set of vinyl records from the 70s and 80s. And then your humble presentation of the recent book editions from Det Poetiske Bureau. The reading from the dadaist poet's CD, as well as the fancy poetry booklet with the printed work was a clear height during the guided tour. I will get it for one of my old favourite friends, for Christmas. However, I enjoyed encountering the Indonesian / Congolesian masks with their wretched faces (among the strangest things I found in Morten's house), and the Ugandian elephants (they gave me a particular story) too, of course. As well as the joy in finding common threads & interests in literary (book / film) experiences in general. Last, but not least, I now know that you ARE the one to tell the rest of us what "the Study of the Upper Air" is, before the end of this week. With all those attic windows pointing straight towards the open sky, you have there in the ceiling of your workstudy, you should know;-)!

PS I will take a walk in your area in Vesterbro later on in this week (Thursday?). I really want to visit the design project (http://www.kristinalykke.dk) you recommended me earlier. Fried noodle with vegetable and Thai red hot chili 
For 8 persons
Cook time: 30 min.
Ingredients:
600 g dry noodle
500 g cabbage or similar, cut in small peaces
300 g green paprika, in 3-4 cm long peaces
1 big whole garlic
10-15 Thai chili (small and strong)
sweet basil
vegetarian soya sauce
fish sauce
lime
6 eggs


How to cook:
Let the noodles cook for 5 minutes. Turn the stove off and mix the cabbage with the boiled noodles (leave the water in pot). Fry garlic and chili until the garlic turns yellow, then add the eggs and continue frying. Pour out the water from the cabbage and noodle pot and add the fried eggs, garlic and chili mix, Thai sweet basil and soya sauce. Serve the dish with Thai fish sauce and chili.
Tips to serve with fried noodle with vegetable and Thai red hot chili:
Chop 4-5 small Thai chili and some garlic in small pieces, mix with lime juice and fish sauce in a little bowl. The taste is salty, sour, hot and fresh!

Welcome Package - Helle & Fatima > Resort 8

My guest has arrived. Fatima from Sudan. She's the best.
I picked her up at Bella Center. A lot off luggage. She's going to New York to another conferance after this.
She's gratefull for the welcome package and all the help she got from Rebecca? Copenhagen Live.
We will get along very well. I'm sure of that. I cant show her a typical danish home. I'm a painter so I have paintings all over, but it is still danish. She love's it. I allready has an invitation for Sudan.



 

She brougth me some very nice presents. A leather back with snakeskin and some very nice stuffed fruits.

Welcome Package - Anneli & Morten > Resort 5

Today I came home and found a paper bag on my doorstep. Thank you for your surprise. I have until now only peaked in the bag, because my guest will not arrive until tomorrow. The joggling set filled me with joy. I have been willing to buy new ones for a long time since I lost the old ones.

Almost 10 years ago I met a girl who taught me, but I was never very good. She told me to name the joggling balls 'tik', 'tak' & 'tuk - then start joggling and saying tik, tak & tuk laudly. The combination of movement and sound will get you into the right rhythm.

For Jessica it was talking to her friend's mother yesterday about all the streetfood in Beijing because she is going to go there to try to find some work as an architect. For Jenny it is seeing the white swans on the lake which Jessica's apartment looks out on. We have black swans in Australia so white swans look so pure & pretty & that's what made me happy.

Jessica (host) and Jenny (guest) here. We were happy to come home to find your gift bag. I couldn't wait for Jessica to come home so I opened the dates because I was hungry after a long day listening to people at Klimaforum and COP15!

Jessica immediately when she got home took a big bite out of the apple and then commenced to demonstrate her juggling skills. I'm afraid that I had already eaten an apple & I can't juggle. But Jessica promised to teach me tomorrow when we are both not so tired.
 

What do these gifts symbolise to us? The apple symbolises to me (Jenny) a local fruit in Denmark which is in season and didn't have to travel far to get to me so that I can enjoy it. For Jessica the apple is an everyday fruit but as a child she remembers they her family had 7 apple trees in their garden and every autumn they would pick the apples and take them to the local apple press to make juice. The juggling balls remind Jessica of clowns and when she was 14 she learnt how to juggle. She was inspired by her uncle to try it and found it was fun. Jenny, on the other hand, has never seriously tried to juggle but it reminds her of her yoga teacher who says that knowing how to juggle is the sign of a misspent youth.

H O M E A W A Y R E S O R T COP15 edition


STARTINGPOINT
Home Away Resort is a meeting place and a temporary lodging experience during ten days of winter 2009. Collaborating with the New Life Copenhagen and the matching system of guests and hosts in Copenhagen during COP15 we involved seven hosts and guests in seven homes to explore new ways of creating an exchange between people from all over the world. The Resort is focusing on the small scale encounter in a kitchen or living room filled with discussions and reflections on the future of the globe as well as the taste of a Thai green curry or the smell of snow.

4.Go to a public meeting place, pick a person, and ask your question from yesterday. Go home and share the answer with your host/guest. 
5. Take a photo of something, or someone in your environment and describe it with one word. Share it with your guest/host. 
6. Book a private home cook for one night. Dinner all-inclusive. Talk to your guest/host and come back to us with a day, and time proposal. 
7. Take a walk, and document it. 
8. Answer Torvald’s BIG question. (”How do you expect what you get and how do you get what you expect?”) Discuss it with your host/guest.

> A room-service dinner was offered to all GUEST & HOSTS: an extended meetingplace with fantastic food made by Nongkran Panmongkol (GUEST CHEF/ARTIST @ HOME AWAY RESORT) & nice and interesting talk with HOST & GUEST and - in some cases -  invited FRIENDS.                                                 
> a COOKBOOK/GUIDEBOOK will be produced with all the material collected from GUESTS & HOSTS at the resort, including recepies, conversations, questions, maps, pictures. The book is coming up in the beginning of year 2010 as a memory of ten december-days in Copenhagen 2009 as well as a manual for a HOME AWAY RESORT WHEREVER!
